I'm guessing she was just acting bitchy for the sake of the skit... There are other clips from the show and she's acting totally normal/nice.

Yeah, I think she was acting for the sake of the sketch as well. No way they wouldn't have run all that by her first. I'm pretty sure stars have "people" who negotiate what's going to be said and done (and not said/done) before they go on talk shows.
ETA, there's a comment on the article that E news did about it, and a girl chimed in and said she did stand in work for this bit when they were rehearsing it, and in the script it says that Jennifer is supposed to act as if she's not enjoying it at all.

I think it would have been better if she hadn't been (or acted) like it was so annoying and she hated every second of it. It ruined the mood of "omg Friends reunion ahhhhh!" and was very distracting.
