Curry, soups, quiches!

I have a great big list of meals we make regularly that will freeze well (or have components that will) to get myself ready before the end of October. Here are just a few!

All-in-one
Enchiladas - black bean, chicken, or beef, whatever you like or some of each
Ziti - traditional beef, mushroom/veggie, white sauce with butternut squash or pumpkin (since it will be fall)
Chicken and Rice Casseroles - parmesan and zucchini, cheddar and broccoli, pot-pie style with peas, carrots, mushrooms
Soups - broccoli cheddar, mexican tortilla (without tortillas), spicy black bean
Chili - make your favorite variety (I like black bean and corn) and eat plain topped with your favorites, with tortilla chips, over rice, over baked potatoes, or with oven fries to keep things interesting.

Components for quick meals
meatballs - Cook and freeze on a cookie sheet before storing in a big ziploc bag. Use for spaghetti and meatballs, meatball subs, with an asian or indian sauce over rice with veggies, or in a pita with hummus, feta and veggies greek style.
Waffles/Pancakes - Cook and freeze with wax paper between them, store in a big ziploc bag. Toast up for breakfast or breakfast-for-dinner. Have traditional with syrup and sides or make a sandwich with peanut butter/nutella and bananas/strawberries.
Sausage - Cook and freeze or keep pre-cooked varieties on hand for a quick thaw and heat. Pair with above waffles/pancakes, rice and beans, in a bun with a side salad, or with roasted potatoes and veggies.
Rice - Cook and freeze in meal-size portions in ziploc bags. Thaw in the fridge or a sink of cool water, heat and pair with whatever you are eating that night. White, brown, mexican, seasoned, it all freezes well.
Taco Beef/Chicken/Beans - Cook up seasoned protein and thaw for quick mexican meals. Use for tacos, burritos, nachos along with pre-shredded cheese and your other favorite toppings for a very fast meal.
