I have been told you can freeze zucchini... I'm trying to eat healthy and two of my favorite meals involve shredded/grated zucchini (not sure the right word.) To help cut down prep time I'd love to grate up a few and freeze. Anyone ever do that? How long does it last in the freezer? Do you thaw it in the fridge for a certain amount of time before use to un-freeze it, or do you have to use it starting frozen? I'm worried about it becoming mushy when thawing.
