My coworker's mom passed away so I wanted to collect money from everyone at work to get something for her. Her family is Filipino Catholic. I'm going to get a sympathy card for everyone to sign and flowers, but wanted to add something else. I know many people make meals for the family, but I don't see anyone volunteering to make something and I really don't have much time to go shopping, cook and deliver the meal. I plan to attend the rosary and the mass as long as I can before my shift begins and I plan to give the family the card and the flowers then.

Maybe instead of flowers, do an edible arrangement? Most of the food people send is not at all healthy. My family has really appreciated it when we've received their fruit arrangements.
Or, my roommate used to always send Cheryl's cookies. they're amazing.

Oh, a third idea I almost forgot about...
A group of my friends chipped in when my dad died and bought a TON of paper plates, cups, napkins, silverware, etc.
That way when people came over and we served the food people had brought us, we also didn't have to worry about doing any dishes.

Plant trees - there are lots of charities online that will do it.

ETA: And making a donation to a charity in their honor if they list one.
