We are going out of town for 12 days, so we're trying to use up all our produce and NOT buy any additional before we leave on Thursday morning. Here is what I have to work with for dinner tonight and tomorrow night:
3 red peppers
3 full ribs of celery
5 pounds of carrots
2 sweet potatoes
5 onions
2 mushrooms
NO meat (ahhh - the next grocery bill is going to be so big!)
Beans/lentils/rice/quinoa/pasta/bread/tortillas
Any ideas? Mostly I just have no idea what to do with all that celery!!
