Mmmm... I love dimsum! Keep in mind everything is grouped by how its cooked (steamed cart, fried/baked cart).
Here are a few favorites:
Steamed Shrimp dumplings (har gow)
Steamed Pork dumplings (siu mai)
Steamed BBQ Pork buns (char siu bao)
Steamed shrimp rice roll (cheung fun)
Fried eggplant with shrimp paste
Fried Shrimp rolls
Fried Chinese donut covered in rice noodle (ja leung)
Egg tarts for dessert (daan taat)
Mango Pudding

HAR GOW or shrimp rice noodles is what I would recommend for newbies! Or sticky rice!

@sunny:'s list is great! Shui mai and steamed pork buns are my absolute favorites. One place we go also has a pan fried pork ginger dumpling that is awesome.
I would also encourage you to just try things that look good to you, even if you don't know what it is - it's fun and fairly low investment if you don't like it.

I second everyone else's recommendations. And if they have those yellow custard mini buns for dessert, get those for sure plus chrysanthemum tea.

@regberadaisy: seriously. I have only had "real" dim sum when traveling in the past. I also prefer to go with someone who knows what they are doing.

Yum!! These are my must haves:
-har gow
-sui mai
-beef cheung fun (or shrimp)
-mango pudding
-egg tarts
-beef balls
-chive and shrimp dumplings
-sticky rice in lotus leaf wraps (lo mai gai)
-Malaysian cake (ma lai go)
