LO is allergic to egg whites, soy, wheat, sesame, and peanuts. We're looking at changing our entire lifestyle. However, LO will be turning 1 in 2 months. I would love to bake him a egg/gluten free cake. I'm not even sure if it's possible.
Have anybody tried the Thomas Keller Cup4Cup flour. Do you recommend it? Do you have any wheat/egg free recipes for cakes?

I have baked with Cup 4 Cup, and it was great! My mom is gluten intolerant, so I made a pie with it for Thanksgiving. No one could tell it was GF! We've also used it to make pasta.
The other day, I was without the correct amount of eggs (I had one, needed 3), so I replaced it with a mashed banana and some milk.

@mamabear57: I haven't baked often sans eggs, but I looked it up when I was making cupcakes, and that was a suggestion. They turned out really well--my students couldn't tell the difference.
Other suggestions are egg replacement powders or ground flaxseed.

We have a special bakery in town that is strickly GF but will take special allergy order as well. Anything in your area like that? I'm to lazy too go through the hassle of making that stuff on my own.

@Mrs. J: Thank you, I'm going to look ingo egg replacement powder/flaxseed/but the banana and milk options sounds like something I rather try first. Thank you for the tip.
@Sugar.Biscuit: I have there's Babycakes that's GF and Vegan, but it's far away from us. I guess I can always have my sister pick something up in LA. I have yet to look into that because we just got his results yesterday.

I've never tried Cup 4 Cup, but I really like Jules GF Flour Blend. It is very similar to regular flour. I hate Bob's Red Mill all purpose because it tastes like garbanzo beans. Blech.
