slow cooker lasagna! I'm obsessed.
1 lb. lean ground beef (or turkey, italian sausage, etc.)
1 jar spaghetti sauce
1 c. water
1 15 oz. container of ricotta cheese (we used skim ricotta to save some unnecessary fat haha)
1 pkg. Kraft Italian Cheese (approx. 2 cups)
1/4 c. grated parmesan cheese
1 egg
2 tbsp. parsley
6 lasagna noodles, uncooked
Brown meat in large skillet; drain. Stir in spaghetti sauce and water. Mix ricotta, 1-1/2 cup mozzarella, 2 Tbsp. parmesan, egg and parsley.
Spoon 1 cup meat sauce into slow cooker; top with layers of half each of the noodles (3 noodles broken up per layer), broken to fit; and cheese mixture. Cover with 2 cups meat sauce.
Top with remaining noodles, broken to fit; cheese mixture and meat sauce. Cover with lid. Cook on low 4-6 hours or until liquid is absorbed. Sprinkle with remaining cheese; let stand, covered, 10 min. or until melted.
Ours only cooked for about 3 1/2 hours because I had a hungry husband and it was fine! Plus the meat is cooked beforehand so it is safe.

also, sweet & sour meatballs - you could serve as an appetizer, or with a meal.
1 part chili sauce to 1 part grape jelly. (however much you want!)
let simmer in crock pot until mixed, then add meatballs and let cook for several hours on low. I don't really have an exact time, I just keep checking and/or eyeball it.

@sorrycharlie: ah, yummy!!!! How many servings would you say? She's single so I bought the smaller crockpot, 3-4 people I think it says.

@sslm: for the lasagna? it's so easy to inhale it! but it fills a standard crockpot. so if she is single, maybe halve it? it freezes REALLY well too, so if she made more she can freeze for later!
ETA: Honestly, DH and I can finish off the entire pot LOL. it's that good. but realistically I think it would feed 3-4 people smaller servings, with side dishes.
ETA: by fill, I mean like 1/2 way up...I don't know how to describe, hahaha.

This is one of my favorite crockpot recipes for breakfast/brunch. Every time I make it it's a hit and everyone loves it. It makes A TON so definitely halve it if you're not feeding a crowd.

Pulled chicken for tacos -
chicken, with any flavor - I like garlic, chili and lime, or enchilada sauce. cook on low for 8 hours (or whatever), shred, and then put into tacos or tostadas. easiest meal in the world to prepare, and so, so good.
