I'd go with things you can make ahead of time. I've made a great overnight brunch casserole similar to this one here and it's always gotten amazing reviews. You could adjust the meat or vegetables to suit your taste.

What about a cheese and fruit platter with apple butter, pears, crackers, some bread choices, several cheeses, drizzle of honey
Smoked salmon platter with the salmon, dill, lemon wedges and capers - maybe with bagel crisps instead of straight bagels
