Roasted carrots are SO good.
Olive oil, whole carrots with the stem trimmed off, salt + pepper.
Lots of good ideas here too.
I usually chop my carrots up and put them in soup and curry. When I put carrots in puree for my DS I steam them and then blend.
I love Thanksgiving!!!

What we usually do for thanksgiving is roast them, then toss with fennel seeds, olive oil and a little bit of maple syrup. Gives a hint of sweet without being too sweet, and the roasting and fennel keep the carrots savory.

Roasted with EVOO, S&P, and a some thyme. That's how I do my sweet potatoes as well.

Usually roasted, but I always want to try carrots Vichy: http://www.food.com/recipe/carrots-vichy-373052 as I think they might have a nicer, glazed taste.

I usually make them like this, but sometimes with an herb--thyme or parsley or something. Not necessarily the healthiest, but they're delicious.
