Very minimal! We use fresh garlic, fresh ginger, garlic salt & fresh ground black pepper the most. We prefer fresh herbs and use basil, oregano, rosemary, bay leaves, and thyme the most.
We use teriyaki, soy, hoison, oyster sauce, fish sauce, rice wine a lot too.

I really like the selection of frozen stuff that is available in one of our grocery stores...garlic, ginger, chili paste, basil and parsley.
For spices, I like paprika, cumin, curry powder and nutmeg.

@Rainbow Sprinkles: I just always forget it exists! I used to use it more when I would freeze the root, but now I have it ground in a jar, so it sits with the sweet spices and I forget about it!
But Mahi Mahi with fresh-frozen ginger and sprouts is an old favorite when fish used to taste good (before the midwest stage of my life)

My usual routine is roast veggies with olive oil, salt, and pepper. Cook everything else in salt, pepper, mirin, coconut aminos (would use soy but we have food allergies), garlic, and sometimes ginger.

for dry, we mostly only use salt/pepper. fresh, we use garlic, onions, and tons of herbs--we almost always have thyme since it's really versatile and keeps longest, but often also have rosemary, basil, mint, sage. it depends on what we're cooking though! other dry spices that get used occasionally include paprika, cumin, red pepper, chili powder, adobe, cayenne pepper. we have some dried herbs as well but much prefer fresh

@Rainbow Sprinkles: I love adding turmeric to onions as I'm sautéing or caramelizing them! Also love adding it to split pea or bean dishes, and an extra boost for curry powder. And tofu scramble wouldn't be tofu scramble without it!
