I want to make R's 1st bday cake, just wondering how early you can bake and freeze and it will taste good still.

For my 2 trial cakes, I froze the layers for a week both times. The layers were perfect--and still flavorful--when they defrosted. For LO's actual cake, the layers were frozen for 4 days prior to her party.
ETA: It was so much easier to frost frozen, too!

As long as it's properly wrapped and defrosted correctly it should be good for months. I made the layers for E's cake a week in advance.

Well our wedding cake froze for a year. As long as you are only doing it a few months you should be fine.

At least a month if you wrap it in plastic and then foil. Probably closer to 2-3 months.

@Smurfette: The morning of her party. I assembled and frosted it while it was still frozen (I finished around 10:30/11:00 a.m.?) and then left the cake out. The party started at 2, and it was cut and served at 3.
It took me about 45 minutes to assemble, frost , and (lightly) decorate both her party cake and her smash cake. It went faster that time because I had already done a few practice runs!
