I've been working to increase my vegetable intake. It's tough though, because I've had to slowly learn how to make vegetables yummy. I'm trying to eat more salad too, but haven't quite gotten the hang of it.

Not sure how to quantify it - I eat veggies with lunch and dinner and I use them as snacks. I eat A LOT of veggies.

Not enough, especially because the ones I DO eat are mostly fruiting vegetables (cucumber, avocado, tomatoes, etc).
I need to work on eating more leafy greens.
So far today I've had sugar snap peas...

Between salads, eating lots of veggies as sides at meals, eating things like stir fry, etc, vegetables are the one thing I eat a lot of. Well, that and the choc chip cookies I just inhaled. But someone had to taste test them.

Not enough. I don't love veggies. Usually just a salad or cucumber.

Usually I get at least my 5 fruits/veggies a day.
I am trying more and more to eat a more plant-based diet, where meat/grains are supplements rather than the focus.
On a good dayI eat:
green smoothie with 1 cup spinach/kale, and 1.5 cups of various fruits
lunch: salad - 1 cup romain/spinach with 1/4 cup of green pepper and cucumbers
dinner: chicken with onion, mushrooms and zuchini with quinoa
that's a good day... today is not a good day haha we desperately need to grocery shop.

More than I used to! I'm making an effort to have at least one at lunch and two at dinner... Ill work down to breakfast! I've been doing the veggie purees in main dishes and spinach smoothies as well.

I usually put a whole cucumber and a handful of kale in my morning smoothie, so that's two right there. And I usually try to pair veggies with dinner. Yesterday I ate the equivalent of two whole cauliflowers because I was snacking on cauliflower mashed potatoes throughout the day, and made a cauliflower "mac" 'n cheese too.

in general i eat a good amount of protein so i have to include as much non-starchy veggies as possible to counter-balance. here's an example of a typical days worth of veggies:
1. breakfast: spinach, chopped asparagus and bell peppers in my omelette. it's usually 1/2 cup of chopped veggies + handful of spinach.
2. snack: pumpkin puree (~1/2 cup) in a single serving of greek yogurt
3. lunch: green salad with a protein. or, i'll have ~1.5 cups of either broccoli, asparagus, eggplant, etc. with the protein instead.
4. snack: sweet potato
5. dinner: green salad with a protein. or, i'll have ~1.5 cups of either broccoli, asparagus, eggplant, etc. with the protein instead. (same as lunch)
6. snack: baby carrot sticks with hummus OR celery with almond butter (about ~1.5 cups of the veggies)
whenever i eat a green salad (spinach, mixed greens, arugula, iceberg, etc.) i usually never measure. maybe 2-3 cups per meal?. i'll also do a green juice a few times a week or a smoothie with tons of greens. kale, spinach, mint, celery, cucumber, etc. also these are portions for a very small sized person, so it depends on your overall diet, fitness goals, natural size, how much you exercise, etc. also try spirulina for your smoothies if you need more greens. a little goes a long way.

I have increased my intake quite a bit: green smoothie in morning, carrots/red or green peppers/cucurmbers for snack with hummus, spinach salad with mushrooms, peppers, cucumbers, carrots for lunch, and mixed veggies for dinner.
