What would you make? I'm going to a sort of potluck lunch tomorrow and have to take an international dish. Recipes are welcome too! I plan to look online more when LO naps so I can go to the store this afternoon but I'd love recommendations! The only instructions were to pick a country and make a dish!

Greek dish: Moussaka
It's a layered potato & eggplant dish similar to lasagna. Total comfort food. I made this for a Mediterranean themed Mother's Day dinner a few years ago and everyone Loved it!

@Mrs. Lemon-Lime: That looks really good but how much could I make the night before? LO wakes up around 7:45 and doesn't like it when I leave her for too long when she's awake (she's in a clingy stage). I can do some during her breakfast but I need to leave around 10:40 in the morning.

@BelugaBean: you can do alot the night before and leave assembly and the sauce for the morning. Boil the potoatos, slice them; slice and salt the eggplants; and make the beef or lamb tomato mixture the night before.

Empanadas are always a crowd pleaser. I would pair it with a cilantro dip.

Taboule is really easy as well and always yummy. I usually make it with the Far East package and then add red onions, feta, and some sauteed chicken. Delicious!!
The best part is that it is a cold salad so you can do it all the night before and it actually tastes better.

Enchiladas...so easy. Paella is pretty easy too!
