My LO was diagnosed right around 3 months. Symptoms included: blood in stool, mucous in stool, super fussy, gassy, and reflux issues. They first diagnosed her with reflux, and while the meds seemed to somewhat help, it didn't get truly better until I eliminated soy and dairy from my diet. It I think takes like around 2 weeks for dairy to exit your system, but I think we probably saw improvement maybe 2-3 weeks after I eliminated?

My LO was also diagnosed around 3 months, but really she should have been diagnosed much earlier.
Symptoms were refusal to drink--entirely. We already had BFing issues (latch because of tongue and lip ties that we had clipped, tie jaw that we went to therapy for), and she still just wouldn't eat. I switched to EPing and then she started refusing the bottle.
She didn't fuss a lot, she just didn't eat. So my pediatrician insisted she couldn't have an underlying issue "because she'd cry all the time if she were in pain". Well, by 3 months, she was only drinking about 12 oz of bm a day from a bottle--and she had to be completely asleep to even drink that.
Eventually I asked for her poop to be tested and it came up positive for blood. I cut out dairy and soy and within 3 days she drank 5 oz straight (while asleep). I've never been so relieved.
The damage was done at that point though, and we had continued feeding issues (refusal to eat while awake) until LO was about 11 months old. Then she finally started drinking awake. She was also late to solids and didn't really start eating them till after age 1.
She's still off dairy and soy at 19 months and is a great eater now. We have tried reintroducing soy recently, but she had a major eczema flare up. So now we're back off it again.

We found out our DD was MSPI at 2 weeks old at her check up at the pedi. She had a BM there and it was shiny/slimey/mucousy and it tested positive for blood. I eliminated dairy and soy hardcore right away and saw improvement after about 2 weeks I think. We reintroduced her to dairy at 6 months old and she ended up being fine!

We found out at 4 weeks when DS was really fussy, wanted to be held constantly, had streaks of blood in his stool, and mucousy stool. After I eliminated dairy and soy, it took a good 3-4 weeks to see improvement. I still wonder if he had another sensitivity that I just couldn't pinpoint because he would still randomly have mucous in his stool and he was never a very content baby. I introduced dairy back into my diet at 10 months and he did great and was able to start eating dairy not long after that.
