I pulled it out and dusted if off about a month ago and I've made so many EASY yummy things in it. It's the only thing that gets me through dinner time now that Charlie is here!
Last night I made French Dip Sandwiches, and tonight we're having Chicken Tortilla Soup.
I pulled out my BH&G slow cooker recipe book last night for some inspiration.

i just made a crock pot potato soup today. i'm not really happy with how it turned out, but thankfully dh will eat just about anything.

@mrs. bird: I'm going to try your rotisserie chicken next, something about the store bought ones make my stomach hurt afterwards. I love the way they taste though!

@StbHisMrs: i don't know remember if it mentions it in the recipe, but ball up tin foil and put them in the bottom on your crockpot, maybe 3 or 4 of them depending on the size/shape of your crockpot, it will keep the chicken above the liquid in the bottom. also, i use a much bigger chicken, but the recipe makes enough rub for a bigger bird

I have a sweet mustard roast with carrots and leeks in mine right now! In the recent past I've made sesame chicken, veggie lasagna, turkey chili, and an Asian peanut butter pork roast. Later this week I am trying a chicken and salsa black bean soup. Love it.

I did pulled pork in the crock pot yesterday. I love it because we usually get two dinners out of whatever I make. Some of my favs....deer roast with potatos and carrots, BBQ pork roast, and chicken chili!! It's so nice to just throw the goods in the crockpot in the morning and not touch it until it's dinner time love my crockpot

Can't wait to try the rotisserie chicken...I probably buy at least one a week and making my own should be cheaper

We loved pulled pork in the crockpot and also corn casserole...it's like super moist cornbread...super good as a BBQ side

i messed it up because it wasn't thickening fast enough so i added more flour which was not a good idea. just some tips: all the instructions that say to do in the "preheated crockpot," i would just do that on the stove. my crockpot never got hot enough and it would be much easier and faster to do it on the stove and then add it to the potatoes in the crockpot.

I made a huge batch of spaghetti sauce lately, a turkey breast with carrots, souvlaki chicken. I use it at least 2 times a week lately.

I love my crockpot! i made a huge batch of pho' last night. I do chowders, soups, I've done lasagnas, roasts....ribs....I have a GREAT america's test kitchen slow cooker cookbook that is fabulous

That's the recipe I used! It didn't call for the carrots or leeks but I had some I needed to use up so I just threw them in with the roast. It came out sooooo tender and yummy. I made mashed sweet potatoes on the side.
Also, that's a generally awesome website for slow cooker recipes.

This weekend I'm going to make some pumpkin butter in ours. For dinner, now that its cooler out, we've been making SkinnyTaste's chicken taco chili a lot. SO easy, SO good!

2 bags of pho' seasoning (the photo. You can also use star anise, lemongrass, and cloves, but i had this on hand)
2 medium onions, diced
4 tsp minced garlic
1 TB oil
1/4 cup soy sauce
4 c chicken broth
4 c beef broth
2 TB sugar
Rice noodles
2 lb beef flank steak
Toppings:
limes
bean sprouts
basil
cilantro
green onions
rooster sauce
Mix oil, onion, and garlic and microwave for a few minutes, stirring. Dump in pot. Dump in liquids and soy sauce, etc. Season steak with salt and pepper and place in there with the seasoning packet. Cook on high 6 hours. (i think low was 9 hours or so). Take out, shred meat. Add noodles. Return to high for 20 min.
Then you just scoop out what you want and dump bean sprouts, cilantro, lime, etc in it to your liking.

@blackbird: wow thank you! My mom makes pho from scratch and my husband always asks me to learn how to make it but it's so much work! Can't wait to try this!
