I did not cook for several weeks and last night I did a big batch of freezer meals... so I have italian lemon chicken in the crock pot for tonight! Rice is already made in the rice cooker from the weekend, and I'll steam some veggies when I get home. Probably peas because that's gone over well with the kiddies in the past...

Super easy because all you need is a lemon, some oil, and some herbs!

i took a break from cooking for a few weeks because of travel, being tired, etc.
my go-to dish is pasta with broccoli rabe (or just broccoli or any other green) and sausage, with plenty of parmesan.
yesterday i made spaghetti with greens that were sauteed in garlic and butter, with parmesan (yes there's a theme). had some plain roasted beets on the side.

We're having leftovers again...I made butternut squash and chicken stew on Saturday and it made a TON. Good things it's delicious!

Hahaha it's so early to be thinking of din din. I have a butternut squash I need to make into soup but I think we will go get some subs tonight. I'm so lazy!

I have a roast beef in the crock pot right now! It cooks all day on low (and makes the house smell delicious) and it's divine when we go to eat it!

@mrs. wagon: lol oh man! I was watching something on food network last week and they made a deliscious soup. So of course it's been sitting there for forever and I forgot the recipe and the show it was even on. One day I'll get to it. Or I'll stick googly eyes on it for Halloween.

Tuesday: parmasean ranch chicken with veggies and rice
Wednesday: spaghetti
Thursday: dinner out for hubby's birthday

Chicken and broccoli alfredo. I made a bunch of pulled chicken this weekend and the in-laws will be here for dinner tonight. It's an easy meal.

@mediagirl: Dip 4 chicken breasts in egg whites (or butter) and coat with a mix of grated parmesan, ranch dressing packet, and crushed cornflakes. Bake at 350 for 1/2 hour or until cooked all the way through! It's a favorite in my house!

@winniebee: it's the inlaws. I only make the real stuff on weekends when it's just the three of us. I'll send you that recipe, it's amazing - just cheese and cream, essentially.

@winniebee: it is soooo good... I'm convinced it's because I used grapeseed oil. My mom left a big bottle with us and I used it with this recipe. I ran out so I got the closest thing I could find at Costco-- a canola, olive, and grapeseed oil blend-- fingers crossed it's just as good.

Salsa chicken (literally just salsa and chicken in the crockpot) shredded and thrown on a salad with tomatoes, corn, and avocado.
