I also like to make steel cut oatmeal, hard boiled eggs, chili, and salsa chicken (chicken, taco seasoning and salsa). I’m always on the hunt for new recipes to try and I use the IP at least once a week.

My favourites have been hard boiled eggs as above, soup and fajitas.
Last week I did broccoli carrot cheddar soup: 2-3 cups broccoli, 2-3 big carrots roughly chopped, onion chopped, broth, garlic, salt, pepper. Use sauté to brown onions in butter or olive oil. Throw everything else in. 5 minutes manual high pressure. Quick release, purée and add a cup of cream and shredded cheddar. Up the seasonings as you like. I'm going to make so many soups this winter with any combo of ingredients!
Fajitas are simple too: 2-3 chicken breasts, taco seasoning or salsa (or both), little bit of broth or water. Can throw in peppers and onions but they do get super mushy (which allows me to hide them for my son to eat) 20 mins manual high pressure with quick release and shred. The meat can be put in frozen as well.

I dont care for chicken breasts in the IP as they come out a funny tough texture. But these recipes are phenomenal: (note: they are not super quick recipes but DELICIOUS!)

@travellingbee: I don’t ever put chicken breasts that I intend to leave whole in the IP...but I found some small, frozen chicken breasts (read: super cheap!!) at my grocery store. They aren’t high quality (duh) but when I end up shredding them you can’t even tell a difference! And they only take 8 min to cook from frozen. Maybe you could try looking for something like that?

There is this one pot chicken teriyaki which is one of my favorites. You make the rice and cook the chicken at the same time.
