We have alot of things that were given to us as either wedding/shower/baby gifts that just aren't us and most of the items are things that should be displayed. I feel guilty for selling or giving them away since they were gifts but we have no storage and I'm not about to become a pack rat.
what do you do with unwanted gifts?

It depends. If they're from people who visit often, I would suck it up and keep it because I feel like they'd come over and realize that the thing wasn't displayed.
But if they don't come to my house, I agree with @andrea. I would try to return it so I could get the cash. If I didn't know where it was from or they wouldn't take it, and it's nice enough to give to someone else I would regift. And if I thought nobody would ever want it, I'd just donate it.

I return, exchange and re-gift things I don't want or need.

i got a bunch of stuff off my registry that i felt i didn't need anymore.... luckily, they gave me a gift receipt, so i returned them and got store credit.
