Shepards pie? I make mine with just cauliflower, finely chopped onions, seasoning, carrots, corn and peas!

@.twist.: Oh man I wish I had non dairy sour cream here!! Stroganoff sounds tasty but I'm allergic to milk and don't have a substitute on hand. We had spaghetti this weekend or I would do that!
@HLK208: that sounds yummy!! Do you use the cauliflower in place of the potatoes on top?

@coopsmama: yep! I don't mash the cauliflower but I chop it into small pieces to cover the meat and veggies. I also top it with mozzeralla then bake it.

This is a quick bolognese I usually make with 1lb beef, DH and I both really like it:
If not- cheeseburgers! oh and I have a good meatloaf recipe if you want it.

Tater tot casserole!!!!!
Brown ground beef with chopped onions (season with garlic, salt, pepper). Put in 9x13 pan and mix with 1 can of cream of mushroom soup and a couple tbsp of sour cream.
Then top with 2 cans of drained french cut green beans.
Then top with shredded cheddar, and of course, a layer of tater tots!

I do ground beef, onions, garlic, plus whatever frozen veggies I have on hand, then add a package of mushroom gravy & beef or chicken stock. Spread in pan, top with potatoes (the only thing I use instant mashed potatoes for), sprinkle with cheese--bake at 375 until cheese is golden and gravy is bubbling over the top...yummmm!!

I agree with @MediaNaranja: !! I love shepherd's pie (and so does LO) I make it often as it makes for great leftovers too.

A spin on taco night is Greek pita night. Cook ground beef with oregano, garlic, onion, paprika, cumin and salt and pepper. Serve in pita bread with chopped cukes, tomatoes, lettuce and olives. You can serve it with hummus, tahini, or make a nondairy yogurt sauce.

DH loves these meatballs http://m.allrecipes.com/recipe/16305/sweet-and-sour-meatballs-ii/ (with half the vinegar it says) on rice with a side or broccoli. I make them about once a month
