I don't have any experience with cakes, but we did molds once and the mold (made by jello) said to spray with non stick spray, we thought this sounded gross and thought we could just let it sit in hot water to loosen the jello before popping them out of the molds. Nope. That stuff wouldn't budge! It was trashed. So jello suggests spraying the container for easy removal, but I'd imagine putting plastic in the dish before the jello might work, then you could lift it out & hopefully the plastic wrap could be peeled off. Or maybe wax paper.

My concern with parchment paper or plastic wrap is that you will likely get lines from the paper or wrap not being perfectly flat. May not be a big deal. You will likely be fine with a glass dish, but I'd use cooking spray before wrap or paper if you want to be extra safe.

@regberadaisy: Cooking spray, cooking spray, cooking spray! I love layered jello and usually make it in a 9x10 glass dish. I always spray it down with cooking spray and I've never had trouble getting it out. Good luck to you! You don't need spray. You do need to let it come to room temperature first. That makes it softer to handle. And you have to resign yourself to losing the outer edges. But you can cut nice neat squares AFTER you've cut out the edges that touch the side of the baking pan. I'm not sure if I'm making any sense, but it's like a cake, you need to mess up the first slice to get the other slices nice and pretty. Same premise here.

I used to make something similar when I was a kid! Well, when I was 10-12 years old. I used to always make rainbow jello creations in my mom's complicated bundt pans. I think they were non-stick pans, but I don't think I ever used non-stick spray (pretty sure that didn't exist back then) and it always came out perfectly. It *does* take a long time for each layer to set....longer than I planned.

I also didn't do the white layers--just jello on top of jello.
