Two slices of leftover homemade whole wheat veggies pizza, sautéed veggies & turkey bacon crumble (squash, zucchini, mushrooms, cauliflower, asparagus) & watermelon goat cheese "salad". So satisfying

@Mrs. Sunshine: for eggplant parm? I did a super quick version last night. I peeled, sliced and salted eggplant. Laid between paper towels with a pan on top to press out the moisture, then sprayed with olive oil and dipped in seasoned breadcrumbs and baked in an oiled pan at 350 for 45 minutes, flipping in the middle. I did the same with chicken and layered the chicken and eggplant with mozzarella and a quick fresh marinara I made and baked til cheese melts. . If you want to do it the right way, you dip slices in flour, then beaten egg, then the breadcrumbs and pan fry in oil but I was trying to go a little healthier last night! LO loved it! She also likes when I just cube eggplant and sautee til brown in olive oil with garlic and Italian seasoning.

@grizz: Getting closer and closer - I am down to like 3 rotating meals and losing interest in cooking which is SO sad because I love it so much!

@swurlygurl: It has made me enjoy cooking again because it takes all the thinking/stressing/planning out of it for me. I just follow the grocery list, then follow the recipe. I really appreciate that most of the prep is done on Sunday, so the meals take me like 10 minutes on weeknights. Plus they're all new things I've never made before! Tonight we're having chicken chorizo paella.

I'm lame and just ate a Larabar, which will be followed by yogurt, an apple, and almonds. I'm more of a grazer than a big lunch eater. Exciting.

@coopsmama: What do you get at Starbucks? I got a greentea lemonade and it was kinda watery. I crave iced coffee so bad but I'm kinda afraid to even get decaf...

@snowjewelz: oh my goodness, I've been craving sweetened iced coffee, too! But they don't have it in decaf. Today I got an iced decaf hazelnut latte. I pretty much avoid all caffeine during the first trimester (I'm paranoid!) but will allow myself some decaf coffee in my 2nd and 3rd.
Have you tried a green tea latte? I haven't had one in forever, but that's a coffee free option that shouldn't be as watery as the lemonade and the creaminess is kinda nice. Also, this has lots of sugar, but a green tea frap without whip is DIVINE and screams summer to me!

I have a spinach salad with roasted turkey, extra sharp white cheddar cheese, and a blue cheese viniagrette...it was a throw random things in the box morning. And an orange!
