@ellewoods84: Yummy! I know, that's my issue too is finding things that everyone will enjoy...kids are so picky!

I am trying some recipes from Cook's Country this month.
Tonight I am doing the Crispy Dijon chicken, which is basically a mayo and mustard coating with seasoned breadcrumbs on top. I've done it before with crushed pretzels, you know when you have a small handful left and they're a little stale? Crush them for a crispy coating on chicken!

Recently I made low cost chicken parm using just four ingredients. 1) chicken- boneless, skinless thighs, 2) Shake & Bake Italian flavor, 3) Spaghetti sauce- spinach flavor, and shredded mozzarella cheese. There were 7 thighs in the package, DH ate five that night, so the meal was a success. I served it with buttery parm pasta and veggies.

@Bao: We have been doing a lot of spaghetti squash lately. With baked eggplant, turkey meatballs, etc. It's good! And way better for you than noodles!
