So far I’m thinking homemade pizza, egg or chicken salad, magic chicken thighs. I have goat cheese to use in the fridge and most of the fixings for soup

@gotkimchi: we have very random schedules in our home so it's a blend of eating out, crockpot meals and then home cooked meals.
-Crockpot meatballs over veggie noodles
-Steak (on sale) potato wedges, steamed asparagus
- homemade pizzas and salad
The other 2 nights are eating out or leftovers.

This is our last week before going back to keto, so we are eating more carbs than usual as a last hoorah. That is counterproductive, I know, but it will probably be months until we have some of these dishes again.
Roast turkey with homemade mashed potatoes and gravy
Chicken fajitas and tortilla chips with artichoke dip
Hamburger steak with brown gravy and mashed potatoes
Hot dogs (roasted in our fireplace) with chips
Sweet and sour meatballs with rice
Wiener schnitzel with Bratkartoffeln

Not sure about next week, but this week we had:
-roasted root vegetables (grocery store has a mix of butternut squash, potatoes, sweet potatoes, and parsnips or turnips) and chicken sausage, all baked on a sheet pan
-skinnytaste healthy chicken nuggets
-squashtastic shepherds pie (food network recipe- my kids wouldnt touch it but I made them little burgers from the ground meat before browning the rest)
-chicken stir fry with snow peas and soba noodles (kids hated it, even with no stir fry sauce or anything. They ate plain pasta and agreed to try the snow peas because I said it would make it snow this week
-We didn't this week but I like to do a rotiserie chicken the night I go grocery shopping, with steam in the bag fresh green beans. The whole family actually eats this
And we have either mac and cheese or frozen tortellini and meatballs just about every week. Fridays are make your own pizza night.
I've been trying hard to meal plan better and get a little more variety and healthier but still easy meals. So far it's been a little better but the kids are hit or miss with it.

I only cook a couple days a week, but:
Tuesday was skirt steak with chimichurri sauce, baked potatoes (in microwave so even easier) and roasted broccoli.
Weds was Greek delivery
Tonight I made turkey tacos. Just a basic taco kit with ground turkey instead of beef nothing fancy. With all the fixings. It’s always the most popular dinner night in our house.
Tomorrow I’m going to make fancy burgers. The market near me makes patties with things like ground chicken, garlic, parsley and Parmesan cheese (or maybe it’s mozzarella, I can’t remember). Will just cook in the skillet and probably serve with sweet potato fries.
Next week I’m thinking I’ll do fish one night (still testing out the cast iron skillet) with a rice pilaf side and maybe peas or zucchini.
And I’ll do pork chops (also in the cast iron) with asparagus and probably some kind of potato.
All other nights will be leftovers or delivery/takeout.

Tonight I was not feeling it with a bad cold so made my daughter pizza pitas and DS and I had pbj. DH not home so it worked!
Tomorrow planning to make smoked turkey sausage, TJ fettuccine, and steamed broccoli (adults love it mixed into pasta but kids eat with ketchup - weird). This is my favorite semi-homemade meal that everyone eats!

The recipe calls to make them like hamburgers but we slice them thin for wraps with hummus, plain Greek yogurt, cucumbers and tomato. I make the whole recipe but made into wraps I can freeze some of the patties to slice later.
And then this awesome easy recipe - the kids will not eat it so they’ll have some deconstructed version with rice, beans and cheese probably. This makes great leftovers. I use a roasted tomato and chipotle salsa.

This week I was supposed to make :
fried rice and scallion pancakes
red lentils w/coconut sweet potatoes and naan
veggie burgers w fries and salad
black bean tacos
pasta w pesto and roasted sweet potatoes / veg
bfast for dinner: eggs, avocado and hash Browns
Then we all got sick with stomach bug over the course of the week so game. Over. Hoping to make pancakes tonight because that seems easy enough on the stomach. D
I did make the pasta w pesto and roasted veggies before the plague set in and that’s definitely my favorite easy dinner as of late.

We have some lobster tails in the freezer, so I will make those in the oven and serve it with saffron pasta as a side.
I also want to eat down the freezer and we have chicken breasts, so I will make cordon bleu.
Other than that, no idea!

@Foodnerd81: Make it snow I'm so going to try that.
I'm not great at side dishes, but I got a steamer for my instant pot, so hopefully we'll have more veggies this year. That said, all of these are entrees only haha

@catgirl: We are doing it too! Tonight is baked cod and Brussels sprouts and tomorrow pulled pork and homemade slaw. Yours are more creative! What I really struggle with thought is lunch options on the go. I know I’m not getting enough protein ... I can’t bring myself to just eat slices of turkey or whatever wrapped up in lettuce lol.
