Margarita cupcakes are the only thing I can think of that fits the bill in terms of being easy for guests to hold/eat and fitting your theme. Churros would be awesome but I'm guessing they would be really hard to make at home.

@Tanjowen: I think they would be fine room temp with warm dipping sauce. Or you could even just stick them in the oven on warm for a few minutes right before it's time to serve them.

I worked at a cupcake shop and we had churro cupcakes (just cinnamon sugar basically) and margarita (lime, basically) and I think those would be fantastic! Even if the place doesn't do anything that fancy, or you have to make them yourself, I bet you can do vanilla cupcakes with lime icing or vanilla icing dipped in cinnamon sugar.

Costco sells churros at their hot food/pizza bar...wonder if that could be an option?

You could also do Empanadas. Most ethnic markets sell pre-made empanada dough in the freezer center (or you could use pre-made pie dough). Use any sort of fruit/cheese/dulce de leche filling, sprinkle with sugar, and bake. They would be nice with some sort of dipping sauce...dulce de leche, chocolate, etc.

Option #3 would be to just go to a Mexican market/bakery and get an assortment of cookies (Mexican wedding cookies are always good!).

This isn't handheld, but its SUPER easy and tasty. She has a chocolate version too. My only tweak is I add way less of the milk mixture - I like a moist tres leches, but not a soggy one. Half the milk mixture was plenty for me.

Anything lemon or lime flavored can go with Mexican food. Lime bars might be a nice change up and you can just call them "margarita bars" or whatever. This is a link for a mojito bar, but I don't see why you couldn't replace the rum for tequila and make them margarita bars!

Ooh, how about lemon/lime cheesecake cupcakes? You just put a Nilla wafer on the bottom of a cupcake liner and fill with lemony cheesecake batter. You can garnish with zest or a lemon/lime candy on top. I know for sure they freeze beautifully - just thaw on the counter and they are ready to go.

If you're still looking for ideas, mango pudding cups would go with Mexican flavors, be beyond easy to pre-make and could be handheld easily.
