LO 1 has a baby Stella doll I can use as a dummy but it's quite a bit smaller than my NB!

I just put "moby newborn wrap" into youtube and lots of tutorials popped up. I thought the Moby seemed so complicated initially but really after just 2-3 times it got really easy. It's hard to practice without your baby though, because the trickiest part is knowing how tight to wrap it, which depends on baby's size. But using a baby doll would work to give you a general sense of how it wraps.
Edited to add: Have someone help you the first few times you try it with the baby. I initially got confused about which parts to pull up, etc, and the baby would get upset with my fumbling. Standing in front of a mirror helps too.

I watched a video on That Wife...she was blogging about traveling w/the moby I think, and made it look super easy. I think once you try it on a few times and figure out what goes where, you're fine to try it with the baby, not the doll. But I agree that a mirror is key!

just google any newborn tutorial, they are all the same! key is practice. The first time I did it, it took me forever and I declared it impossible to work on my body. By the 5th time I did it, it was super easy fast and comfortable.
One tip is to not be too tied to the placement they tell you in the videos. For some reason they always say to start with the tag at your belly button, but when I did that the wrap was always way too loose and LO was uncomfortable and not secure. For me, it worked much better if I started it with the tag half way between my belly button and the bottom of my boobs. But I assume this will vary based on your body and your baby!

I found it easiest to tie it all the way first, and tie it tighter than I thought I needed to since it is so stretchy. But, I didn't start using it until 7 weeks.
