Okay, I keep seeing meatloaf mentioned in the what's for dinner posts. Meatloaf just makes me think of brown mush that my dad would pour ketchup on in the 80s, but now I'm curious. Anyone want to share their delicious meatloaf recipes?

I love making mini meat loafs in a muffin pan. I use ground turkey, mix with some BBQ sauce and pepper and bacon cut up very small. I brush BBQ sauce on the top and bake about 20-25 minutes at 375. The last 5 minutes or so I add some shredded cheddar cheese. So good!

I love the various paleo meatloaf recipes out there. I just made paleomg's bacon smothered meatloaf and i think i've made one from nomnompaleo too. There's also a breakfast meatloaf thats great for taking to work or popping a runny egg on at home. I'm eating meatloaf for breakfast right now!

I use the Lipton onion season mix packets with some milk and eggs. It's not modern or fancy but it works for us. I also found the only way my husband will eat it is with the organic ground beef from Costco. It just has a better flavor and not a lot of fat.

I wish I liked meatloaf. It's so easy to make in advance. I just find it too dry, usually, and smothering it in goo defeats the purpose lol. I like meatballs though! Especially in soups

We had Rachel Ray's Cajun meatloaf last night. I divided the batch in half and froze part of it. It was perfect for the two of us.

We make Jamie Oliver's pot roast meatloaf. It's really delicious. The sauce is not at all traditional: it's diced tomatoes, chickpeas, smoked paprika, onion, rosemary, Worcestershire sauce and balsamic vinegar (and some other stuff I can't remember off the top of my head). Super yummy!

I use ground beef, eggs, panko, worcestershire sauce, garlic salt , and those French's fried onions - YUM!!

I made it a little healthier by using spicy turkey sausage and lean ground beef for the meat, skipping the bacon, and substituting coconut milk for the heavy cream. It still turned out great!
I've also made it the full fat way and it's good too.

I roast carrots and onions then puree them. The goo is then mixed into the meat with spices and minced garlic. I serve it with mushroom gravy and my everyday - not - so ordinary mashed potatoes.

I make mini meatloafs in a muffin tin, cooks so much quicker. I do hamburger, onion, oats, egg, pepper, ketchup, brown sugar, garlic, and then for the top I mix ketchup, brown sugar, and garlic to make a sweet sauce.

I adapted Pioneer Woman's meatloaf last night! As in I stole two ingredients and made it completely my own.
Not dry at all. I use bread crumbs, panko, parsley and parmesan cheese! Let me know if anyone wants to recipe!

I've recently made a Spanish turkey meatloaf with lots of veggies (onion, garlic, bell peppers, tomatoes, and shredded sweet potatoes) that was really good.
My husband loves a cranberry chipotle meatloaf recipe from my SIL makes, but I haven't made it in a while.

@locavore_mama: Haha I almost never measure anything, and I feel bad when someone asks me for a recipe because I want to be like..."well, I used a cupped handful of diced onions...." which really doesn't translate well

My mom makes the best meatloaf
1lb ground meat mix (beef/pork/veal)
2 eggs
1T milk
breadcrumbs
Ritz crackers
1 can condensed Veggie soup
1 packet dry onion soup mix
S&P
Knead everything together until moist & firm cook 1 hour at 350

I make a riff on Ina Garten's turkey meatloaf. DH loves it better than beef meatloaf.

I use 1 package (like 1.3lbs) of ground lean turkey (not breast, which I find too bland and dry), so basically we're cutting down the recipe to 1/3.
I finely dice up onion and cook it in a frying pan with a little oil, dried thyme, Worchestershire sauce and ketchup (since I don't feel like opening up a separate thing of tomato paste), thinned out with some water. The point is to cook and reduce everything to get a flavorful onion jam mixture at the end - but I don't cook it as long as Ina does. All my stuff dumps in there and cooks in 3-5 minutes.
For extra flavor, I add some parmesan cheese or nutritional yeast (since DH can't eat cheese) to the mix and smother the whole thing in ketchup. Its DELICIOUS and makes the best sandwiches too.

I make turkey meatloaf but shape it like burgers because my husband says he hates meatloaf. He asks for turkey burgers (served without a bun, usually with roasted sweet potatoes and a salad) at least once a month. So I play along.
Ground turkey thigh meat
4-5 green onions, chopped
a small handful of chopped fresh herbs - parsley, cilantro, mint, tarragon - whatever you want of a combination thereof
salt and pepper
about 2 t. cinnamon
about 1 t. nutmeg or allspice
about 1/4 c. of crumbled feta cheese
I cook the patties in a little bit of olive oil for about 6 minutes per side over medium heat.
Bonus - last time I made these, I made a bunch of small, meatball-sized "burgers," too. DD LOVED them.

I like this All-American meatloaf from Cooking Light, that has cheddar cheese mixed in. http://www.myrecipes.com/recipe/all-american-meat-loaf-50400000119678/ I usually use panko instead of the cubed French bread.

I make taco meatloaf that everyone in the house loves.
2lbs ground turkey
small can of sweet corn
1/2 can of black beans, drained and rinsed
taco seasoning packet, or I use this recipe ( http://allrecipes.com/recipe/taco-seasoning-i/ )
mix it all up, put in a loaf pan and bake at 350 for about an hour and a half... I always temp it, so I don't exactly remember how long it takes to cook.
About 10 minutes before it's done I take it out of the oven and drain the fat, sprinkle cheese on top and put it back in the oven to finish baking.

I make two different meatloafs. One has applesauce and mint jelly and the other is a more traditional meatloaf and the sauce is sweetened with brown sugar. I think something that makes a big difference is using both ground beef or turkey and some ground pork. The pork adds tons of flavor (spicy or regular) and you don't need much at all. If you want recipes, I can share those as well.

I'll have to give some of these a try! DH claims his mom's meatloaf as his favorite meal ever. We made the Pioneer Woman one once, but neither of us liked it.
