Is she Mexican or is it just Mexican themed? Wondering how authentic you need to be?

Coronas! Margaritas! Can a local Mexican restaurant cater? Is it at a home or restaurants?DIY Taco bar? Adult piñata? Filled with mini liquor bottles? You can totally make a piñata if you're crafty!
Mexican wedding cookies as party favors? Or churros?

Oh definitely Coronas and margaritas then!!! Maybe you can get plastic Margarita cups engraved and those van be the favors?

I like a Mexican Fiesta theme. Tons and tons of paper umbrella, guacamole, DIY Taco bar, chips and salsa.

Piñata!!

Maybe micheladas and margaritas to drink, tacos/salsa/guacamole to go along with the nachos, and churros or mini flans for dessert. Small cactus plants would be cute centerpieces and the liquor piñata sounds like a great idea.

I hosted a Mexican themed bridal shower once! I picked a color scheme of turquoise, orange, fuchsia, purple and red. I made individual pinatas for each guest with stripes in those colors, put their favors inside, and put them at each place setting to decorate. I used turquoise bandanas for cloth napkins and bought cheap silverware and dipped their handles in those colored paints to create stripes. I also made fringed banners from tissue paper and a banner that had engagement photos trimmed with matching fringe. There's a lot of Cinco de Mayo party inspiration that could be adapted too. Depending on time and season, a Mexican hot chocolate bar would be fun. Little succulents or cacti could be fun and easy favors too!

@cookiemomster: hahaha, sorry! If you do make them, I recommend spray painting them one of your colors before you add the fringe. That way if you do a less than perfect job covering them, it's not quite as noticeable.

Maracas as party favors. You can get them inscribed. They can double as party favors, place setting decor, and nousemakers!
