I need some new recipes! The healthier and shorter the ingredient list, the better. I don't mind lots of steps, I just don't want to buy 30 ingredients at the store for one recipe.
Anyone have any recipes to share? I'm totally out of creative ideas.

My favorite is very easy. Chicken tacos in the slow cooker. Put chicken in and put in some garlic and paprika, things that are always in my house anyway. Cover with salsa and cook on low about 8 hours then shred. You still have to buy all the taco fixings, but we usually just get the shells and some cheese.

Have you ever looked at skinnytaste.com? Everything I have made from there is really good and easy to make.

I love to put some chicken on the grill, cut an orange and squeeze the juice over it while it's cooking. Then put the chicken in a salad with sliced mandarins, pecans or walnuts, cherry tomatoes, cheese, and cesear dressing.

My go to lately is chicken breasts marinated in honey Dijon salad dressing, just cooked on the grill. Then I take whatever veggies we have in the fridge in a big ziplock w salt, pepper, olive oil and balsamic, and grill those too. Typical veggies include asparagus, zucchini, portobello mushrooms, mehole onions (skinned w top and bottom cut off) peppers. It's delicious!

Last night we had quesadillas with shredded rotisserie chicken, pepperjack cheese, and thinly sliced peaches. Dip in 1/2 c greek yogurt+1 tsp honey+ 1/4 tsp lime juice. Really good and really easy. I get most of my recipes these days from Cooking Light (this one included).
ETA--Even my currently picky 15 month old ate this one up! Win!

Crockpots are the way to go, in my opinion. Especially when you're a mom. My new favorite is making french dip sandwiches in the crockpot. I just googled a recipe online and used what I had in the house. If I didn't have something in the recipe, I didn't sweat it, it's just a marinade at that point.
I also made tuna noodle casserole the other day. I forgot how easy and good that meal is!!

Dittos on skinnytaste! I made this quick skillet steak with mushrooms and onions and it was fabulous: http://www.skinnytaste.com/2011/08/quick-skillet-steak-with-onions-and.html
I also love her asian glaze drumsticks (bonus: chicken legs cost less than breasts or tenders): http://www.skinnytaste.com/2010/07/asian-glazed-drumsticks.html (though the ingredient list is somewhat long, I usually have most of these items in the house and only have to get the legs, scallions, and fresh ginger)
Pinned for the menu for this week is penne rosa with chicken, made with greek yogurt instead of cream. Haven't tried it yet, but I'm hoping it's good!: http://backtoherroots.com/2012/03/20/penne-rosa-with-shrimp/

Since it's summer, what about lighter dinners? Non-lettuce salads: kale, bok choy, napa cabbage, spinach and other non-lettuce greens. Mix in fresh fruits and light dressings, avocado, nuts, grilled meats, etc.
Fresh fish tacos (grilled or broiled white fish, not fried) or shrimp tacos with avocado, cilantro, cabbage and onions. Use warmed corn tortillas instead of the premade fried shells for healthier, fresher type tacos.
We like this recipe in the summer too:

Great with grilled chicken, or to use up leftover chicken.
Premade mahi mahi burgers (we get ours at BJ's), and make (or buy) pineapple salsa to go on them. Salmon burgers - great grilled. Grill up some veggies for the side dish.
