How about parfaits? You could use regular yogurt, or frozen or ice cream, with fresh fruit or preserves and maybe graham cracker crumbs.

I usually do a trifle! I get store-bought angel food cake (or pound cake, mmm), break it up, and layer this:
cake pieces
blueberries
lowfat cheesecake pudding mixed with fat free cool whip
strawberry slices
and so on. I usually cover the top with a layer of strawberries around the edge, then a round pile of blueberries in the middle. I assemble the trifle the night before, leave it in the fridge, then top it off with more cool whip the day of and do the top fruit then-- the trifle settles overnight.

Jell-o! You can do red and blue, and for the white, I think you can do the unflavored and add condensed milk.

@regberadaisy: I've done it in clear mugs and tiny versions in champagne glasses and they come out great!!
