I suck at making pancakes. Either the pan is smoking or the pancakes are burning or not getting done. Any expert pancake makers out there who want to share their tips with me? What kind of pan do you use, what do you grease it with, any favorite pancake recipes (I prefer homemade, not mixes), etc.?

I suck at pancakes too!!!! It's pathetic. But this is the best/easiest/most amazing recipe I've ever tried. I was a bit intimidated by the whole wheat, but it's a breeze in the blender. It takes me about 3 minutes to mix the batter, and you actually can't mess them up. And they freeze awesome! (I've never actually made them with kiwis and bananas on them.)

ETA: Also, using an actual griddle made a big difference. These still work well in a pan, and I used to resist getting the griddle down just for pancakes, but totally worth it. Then I don't grease with anything.

I found that the pan (non stick, for us) has to be no hotter than med heat, and it helps to warm the pan up fully before starting the first pancake. I use just plain canola oil for frying.

I use butter for grease on medium heat, and use a homemade buttermilk recipe from mil! The heat setting is what makes or breaks the pancake!

I JUST perfected this. Our new house has an awesome gas stove that heats up super fast and so every receive I saw that said medium-medium high = burned and raw pancakes. I use a cast iron pan on medium low to low and if that batter comes out thick I spread it out so it cooks more evenly.

Medium heat, butter, wait until the pancakes form "bubbles" that pop before you turn them. Pans shouldn't be smoking when you cook, it's too hot.

Well. If my username is any indication, I love pancakes! I agree about preheating the pan, and I always have to adjust while I'm cooking. So if I start the pan on medium, I usually end up having to turn the heat down as I cook more pancakes, because the pan retains heat. I like to use Baker's Joy as my cooking spray. My go-to recipe for pancakes is:
1.5 c all-purpose flour
1 TB sugar
3.5 tsp baking powder
3/4 tsp salt
Whisk those together, then add:
1 egg
1 tsp vanilla
3 TB melted butter
1 cup milk
1/2 cup yogurt (plain or vanilla) --alternatively, you can increase milk to 1.5-1.75 c but I like the texture that the yogurt givesStir everything together until well blended. Let the batter rest while you heat up the pan.
I often mix in 1 cup frozen blueberries (sometimes with a tsp almond extract) or 1/2 c chocolate chips.

I use a square nonstick griddle pan and heat it to medium or slightly lower, like most have said. I just use Pam (canola oil spray). I use this recipe - I have tried several and I really think it's the best! http://www.food.com/recipe/fluffy-pancakes-29155 I reduce the milk to just 1 cup so they are a bit thicker - they come out nice and fluffy! Definitely wait until the edges of the pancake look a bit dry and there are bubbles on top. Mmmm, now I want some pancakes!

@Pancakes: I also end up having to turn down the heat after my first batch because the pan gets too hot. Good tip!

Before I add the batter to the pan I sprinkle a few drops of water on the pan. They should sizzle and dance if it's hot enough but your oil shouldn't be smoking. Once the batter is added I look for bubbles forming throughout the pancake before flipping. They should form and pop and not be filled in with more batter.
Oddly enough I learned my technique in Girl Scouts. We were tested on campfire in the rain. Kind of funny that we had a pancake test but it certainly stuck in my memory.

I def look for the bubbles too. And my mom used to tell me the first ones are never the best since the pan hasn't warmed up enough, but they get better from there. The recipe my mom and now me, always use is from marion cunningham's the breakfast book.

Buy the frozen ones that you just pop into the microwave? Lol! That is the lazy version of pancakes...and the one I do 90% of the time.

I do a lot of what has been mentioned, but I also make my batter a little runnier than what the recipe calls for so the pancakes flatten out more and cook through.
If I am making a large batch I stick a sheet pan in the oven to keep the first cooked batch warm.

I use a non stick pan and either use no oil/butter or very/very little (like rub just a bit on from a paper towel). Oils and butters have a lower burning point than pancakes, so they will often coat the pancake causing the outside to burn while the inside is still raw.
