@yoursilverlining: well, i'm not jewish, so i might get some of these wrong, but maybe someone with more knowledge will correct me
no flour other than kosher for passover matzo, no wheat, barley, rye, spelt or oats, no shellfish, no meat (because dairy is allowed and you can't have both being served), no rice, no beans, no corn. i think i got them all

If you're following ashkenazi rules (no beans, peas, corn, rice) then I think chickpeas might be out as well? We were never that strict, just made sure to stick with kosher for passover products and ate a lot of matzo.

@mrs. bird: interesting! I hope I didn't mix up/violate any rules, but here's a few ideas:
Does quinoa count as a “grain” for Passover? If its ok to eat, you’ve got TONS of options there with quinoa salads.
Chicken salad, egg salad, tuna salad, ham salad – all on matzah or over greens. No cheese.
Baked regular or sweet potato
Meat with sweet potato sticks/fries
Lemon baked chicken with roasted veggies
Grilled salmon with roasted veggies/salad
Beet salads (beet, arugula and goat cheese is fantastic)
Veggie soup
