We spend a lot of evenings at the pool and I'm tired of PBJ. Suggest some of your favorite pool-side dinners. Last night we had chicken salad, raw veggies, cut up fruit. I need a better way to take warm food with us, I'm tired of crudites.

- Pick up a pizza
- Lunch meats, baguette/crackers, cheese and green smoothies
- Tortellini tossed with wilted spinach and mushrooms with garlicky oil, parm cheese, and a squeeze of lemon.
- Zucchini bread, cold roast chicken, tomato/cuke salad
- Caprese pasta salad with arugula and ham mixed in.
- Caesar salad wraps with chicken
- Quesadillas with chicken and veggies.
- Hot dogs and corn on the cob.
- Pan fried potstickers
- Lettuce wraps with tuna salad, Asian-style ground meat, chicken salad, egg salad, etc.
- Doctored up mac n cheese with peas and meat of some kind.
- Reheated kabobs with cucumber yogurt salad
- Any kind of all in one rice meals, like jambalaya, red beans and rice, dirty rice, fried rice - you can eat warm in small paper bowls.

@looch: that's smart. We have taken cooked hot dogs, wrapped in tin foil, packed in a lunch cooler before and that worked out well.

I've done cold pasta salad, either with regular pasta or tortellini. It's hit or miss with my picky kids, but I'll add things like chicken or chicken sausage, cut up leftover hot dogs or hamburgers, or lunch meat, then chopped spinach or arugula, tomatoes, and whatever other veggies I have that my kids might eat. And cubed cheese or feta crumbles. Usually I just toss with a little olive oil and add some balsamic vinegar to mine.
I always like it. Kids eat it maybe 50% of the time.

We have picked up a fried or rotisserie chicken!
Our kids much prefer a snack dinner for the pool though!

@gingerbebe: 's suggestions are better, but if you want easy.....maybe once a week or every other week I'm willing to let my kids eat a lunchable at the pool for the sake of convenience. If you look around your grocery store, there are some new brands that are a little healthier/more like a bento box as opposed to the traditional yellow box full of processed goodness that we enjoyed as kids Sometimes I assemble my own little bento bag of prepacked grocery store convenience snacks - our store has apple slices & raisins, carrots & hummus, etc. in kid size prepacked containers near the cut fruit, so I throw those in with some cheese sticks, crackers, and a pack of pepperoni and we have a simple dinner.

@PinkElephant: I think the issue is OP wants something good to eat!
Also, I can't believe I didn't post this - duh - BURRITOS. Just a bunch of bean rice and cheese burritos with chips and salsa/guac would be great and easy. You could probably stirfry some onions, peppers, and spinach together and throw that inside for some extra veg too. Or I might drag a big 7-layer dip with chips and carrots and call it dinner!

@gingerbebe: Ahhhhh sorry @mediagirl: - I was scanning and missed that you need food that's good for you, too. That part is tricky....I feel like quesadillas travel well when wrapped in foil (and taste ok warm rather than hot)...but I suppose that's still not super exciting. Sorry I'm not more helpful!

One of our favorite beach meals is Mediterranean style pitas. Pitas with hummus, tzatziki, chopped tomatoes, olives cucumbers, feta, chicken for those who want it. I also made gazpacho recently and we sipped it out of cups at the beach.
