This recipe (or anything where you add goat cheese to the potatoes) is out of this world. I made it for Thanksgiving last year.

I'm making shepherds pie tonight..... that requires potatoes.

I used to make a yummy casserole dish where you slice the potatoes thinly and layer them with zucchini, eggplant and cheese and top with breadcrumbs.

That's all I do!

I like to make potato wedges. I cut a potato into maybe 6 wedges, then toss them with olive oil, garlic, onion powder, chili powder, and parsley. Then i toss them on a sheet in the oven for about 40 minutes at 450 degrees. They get so crispy but have SO MUCH FLAVOR. But they taste almost french fry is and guilt-inducing.

Some sort of potato leek soup, or baked potato soup...mmm, that sounds good right now.

You could make potato gratin! Slice them super thin and then like a lasagna, layer potato, cheese, cream, salt, pepper, nutmeg, potato, etc. You can find recipes online that are more exact

potato salad! this is my favorite recipe:
3 potatoes (cubed and boiled)
1/2 jar mayo
1 pack oscar meyer sliced ham, cut into squares
2 hard boiled eggs, sliced
mix it all together, salt & pepper to taste

we're going to have this at thanksgiving. sooooo looking forward to it.

potato pancakes are also good. kinda like hash browns, but with other stuff mixed in.
