LO's birthday is Monday so I'll be baking her cake Sunday night. I plan to make a double batch of batter and use the second batch for cupcakes for daycare on Tuesday.

Do you suggest I leave the cupcakes on the counter for two nights or in the fridge? I won't frost the cupcakes till Monday night and they'll Def go in the fridge then because I'm making a Greek yogurt frosting for the cupcakes.
