I'm baking cake layers and mini cupcakes for LO's party Saturday afternoon, I'm going to frost them Saturday morning. Should I freeze or refrigerate them until then?
If I freeze them, when/how should I defrost?

Refrigerating actually dries out cake, so I'd go with freezing.
When making a layer cake, I bake, level and freeze the cakes, and then stack and ice them still frozen.
ETA: I thaw it just on the counter for about 30 minutes, but go ahead and ice partially frozen.

Thanks! I'll wrap them in saran wrap and freeze them until Saturday!

Freeze! They thaw quickly and frost easier when still kinda frozen, IMO
