It's not low fat but the chicken paired with a big salad is nutritious and filling. You could probably replace the vegetable oil with coconut or ghee to make it paleo.

Like for an emergency meal? Two eggs over easy over a baked (or microwaved, depending on time ) sweet potato is my go to. I wouldn't serve it to guests, but works in a pinch. Also a sweet potato with a scoop of almond butter is good too.

Or, a favourite pretty-quick recipe is stuffed peppers. Brown some ground beef and onions, mix in some salsa or tomato sauce, stuff it inside a bell pepper, and bake it (with or without cheese) for about 20 minutes.

I've been making a quinoa salad with chickpeas, avocado, roasted corn, cilantro, lime, cucumbers and cherry tomatoes. It's a cold salad and I have a few days in a row for lunch or a side. It's healthy delicious and so easy.

the fastest for me is to saute some ground beef or turkey with onions, mushrooms and asparagus... or whatever veggies i have on hand!

I took ground turkey and mixed in some seasonings and portioned it out and grilled patties for the week. Very paleo, good for breakfast or lunch. I also cooked up a bunch of brown rice and quinoa on Sunday and portion that out when steamed veggies all week.
I marinated chicken in "man pleasing" sauce, a mix of Dijon and maple syrup. Grills up easily.
Lately my dinners are fish, chicken or turkey, brown the or quinoa, veggies, and some avocado.
One of my favorite meals was chicken and artichokes in a lemony butter sauce over puréed cauliflower. It was broiled so very quick and delicious! A million calories, though

Not totally paleo - but I melt coconut oil in a pan, add onion and let it cook, than add a can of drained butter beans - toast until it starts to crisp up, add a bunch of kale and sauté until cooked then top with a few dashes of balsamic. Doesn't sound like much but it's yum

Our fastest meals are grilled meat/fish of your choice and a great salad - think arugula, kale, interesting greens vs. Boring and maybe nutritionally questionable lettuce, avocado, nuts, fruit, seeds, onions, peppers, etc.
Healthy and filling dinner in less than 15 minutes.
We also love quinoa and farro salads with a grilled or broiled meat/fish.

Tomato mozz salad tossed with lemon juice and a scoop of pesto thrown over anything - salad, grilled meat, pasta. Or just make it tomato with pesto if you want less cheese. If it's a salad I also add cold rotisserie chicken.
I also like a can of black beans simmered with salsa topped with shredded raw cabbage. Add some corn of you want. Sounds weird but super good!

Chicken tacos in the crockpot are super easy. Just put chicken breasts (frozen works great), taco seasoning packet, drained can of black beans and enough salsa to cover the chicken in the crockpot for a few hours.

We love veggies + cheese on the grill; zucchini and cheddar, or tomato slices, a bit of season in salt and mozzarella cheese.
Also, mushrooms stuffed with basil pesto and Parmesan cheese, then grilled.

@LindsayInNY: Haha, that's always my first thought when I post something too!
I basically only cook things during the week that I can prep ahead and put in the oven to cook. That means I rely a lot on baked meats, so boneless pork chops, chicken breasts, pork tenderloin, fish filets, that kind of thing. I've learned a few marinades that are super easy to keep in the pantry or fridge and I just rotate among them. Bonus is that most of them work on pork/chicken/fish.
Marinades/glazes:
orange juice, maple syrup
apricot jam, dijon mustard (classic, my husband loves this)
balsamic glaze, straight from the bottle
honey, lemon juice
pesto, straight from the jar, with cherry tomatoes
plum jam, soy sauce
teriyaki, wasabi, panko

@LindsayInNY: DH and I really like it so far because we actually use everything we buy as opposed to constantly throwing out 3/4 bunch of cilantro or buying some weird condiment we will only use once. For example, I used the juice of a lemon for one recipe and the zest for another. It's much less wasteful so you save money.
