The one I made for J's party was a fruit quinoa salad- super good and got tons of compliments on it! I'll look up the link and post it.

We just did one this weekend with to tomato onion green onion parsley and mint. It was really good

I usually do quinoa, cucumber, purple onion, tomato, kidney beans, garbanzo beans, lemon juice, olive oil, garlic, salt, rosemary.

@Arden: do you use raw garlic & rosemary or do you sauté those a bit with quinoa in a pan?

@regberadaisy: I put the olive oil, garlic and rosemary in the the quinoa when I'm cooking it. Then chill it and add everything else.

We like a "southwestern" salad with quinoa, jalapeño, cilantro, red onion, black beans, halved cherry tomatoes and avocado. Dress with a little olive oil, lime juice and S&P. You can omit the jalapeño if people don't like spice.

I do quinoa, dried cherries, feta cheese, red pepper, red onion, and shelled edamame. Top that off with a vinaigrette made with olive oil, red pepper, and some honey. Delish!

Oh this Lemon Cilantro Chickpea Quinoa salad is my favourite salad ever. Takes about 30 mins to make, but is so delish!

I like caprese quinoa for a quick side. Quinoa, balsamic vinegar, olive oil, salt pepper, basil, mozzarella balls, grape tomatoes.
