Our honeymoon was in Moorea, which is right next to Tahiti, you take a ferry over. Moorea is a little more quiet and less busy/crowded than Tahiti. We stayed at the Hilton Moorea in the overwater bungalows and it was beyond amazing. Total once in a lifetime experience. Not cheap though.

We went on our honeymoon and of all the dozens of countries we've visited all over the world, and beaches from Australia to Thailand to Zanzibar to Greece to Bali to Egypt to Hawaii, French Polynesia was by far the most amazing beach vacation we have ever taken. We stayed first at the Kia Ora on Rangiroa and it was super but the most amazing once-in-a-lifetime bit of the whole trip was their little deserted island on a Rangiroa motu called Kia Ora Sauvage. Five huts on a picture perfect castaway island in the middle of the South Pacific. It's not for everyone but for me it was perfection. Best place I have ever stayed. Check it out on Tripadvisor and a Flickr image search to see if it is for you. No kids allowed on that island so we won't be back for a while.
We stayed in over water bungalows on both Tikehau (Pearl Beach Resort I think?) and Bora Bora (the St Regis) and both were lovely. But I get a bit uncomfortable with over the top (personal butler?) service so the St Regis wasn't my favorite. Though Bora Bora was of course gorgeous. It is just very developed and less wild and remote feeling than Rangiroa. Depends on what you're looking for.
If you scuba dive, you will be in heaven. The diving at Tiputa Pass in Rangiroa was the most exhilarating I've ever done. And saw some incredible sights on Bora Bora dives as well (a huge Lemon shark gliding around, a magic eel "garden" and lots of turtles and coral and fish for days. Tikehau was meh for diving in comparison but incredible compared to, say, the Great Barrier Reef. Snorkeling is pretty magical there too - though the coolest stuff (mantas!) is deeper here so not the best snorkeling in the world.
Have such an amazing time - what a romantic place!!! Will always hold my fondest memories.

@PawPrints: we also stayed in moorea! We stayed at the Sofitel hotel in one of those overwater huts and it was amazing!

Tahiti sounds amazing! I was just watching an anthony bourdain episode when he was in french polynesia. How long is the flight and how far along will you be?

I'm jealous!! When I was in college, I went with my family to Tahiti on our way to New Zealand. We stayed at the Intercontinental. They had the huts over water (we did not stay there), beautiful pool and beach area.
