we live off rotisserie chicken! I love making soups with it- chicken noodle or chicken tortilla soup. For sides, mashed potatoes are always good and easy

i love putting rotisserie chicken in homemade soup because i always find i never use the whole chicken for a meal. i also love putting goat cheese on it... cuz i love goat cheese on everything! sides... i love those bistro rice packs because they're super easy. scalloped potatoes or baked sweet potato. also i love cooking carrots with a bit of brown sugar and coconut oil. yum!

I love just eating it with sides (mashed potato and cranberry sauce is my fave, or corn) but I also love using it in things like chicken salad, or chicken tacos!!

-tacos/enchiladas
-on top of salads
-I saute and season a bunch of veggies and add it as the protein
-I make a chicken, broccoli, cheddar, and quinoa bake and I'll use this
-chicken pot pie soup
-white chicken chili
I could probably go on and on. I love using rotisserie chicken!

Mashed potatoes and a veggie or salad to go with it. I like the frozen bag of potatoes you just microwave then add butter and milk and mash. So easy!

Oooh good question! The CostCo chickens are so cheap and such a quick dinner option! We got one the other week and did pulled chicken sandwiches (mix shredded chicken with BBQ sauce and put on buns, serve with mayo-less coleslaw). You could also do tacos, as a chicken salad, or with pasta (chicken, kale/spinach, mushrooms and pasta shells).

I shred it and toss it into a green salad. I could also see doing some kind of quinoa and roasted veggie side. Or osme couscous and a veg. roasted sweet potatoes (or microwave baked sweet potatoes)

I always save the last of it for buffalo chicken dip! We also throw it in southwestern-type casseroles, enchiladas, sometimes mac and cheese. And I like it with cheese and fresh bread.

We eat it with sides on the first day then Chicken quesadillas or chicken salad sandwiches are always an easy second meal with the leftover chicken.

Is it bad that my husband, daughter and I almost eat a whole chicken? Sometimes there is a single portion left but certainly not for another dinner!!
Thanks for the suggestions. Tonight I'm going for smashed red garlic potatoes.
