I'm a interim SAHM until I find a job. With a NB and toddler my prep time is minimal for dinner. So, what are you favorite set it and forget it meals? ie Meals that require minimal prep and attention from you while cooking? Either in the oven or crockpot or other method.
We're meat eaters in this family so total veg meals won't fly. I prefer all our meals to have a protein and veg.
For example tonight I'm making ribs & kraut with apples in the crock pot. Will probably steam some broccoli on the side as well.
On friday I'm making a chicken drumstick with butternut squash & apples in the crockpot. (Can you tell we went apple picking?
) On the docket for next week is a chicken, quinoa & broccoli casserole.
