It seems to be hotter-than-hot everywhere right now and I was inspired by @Mrs. Cowgirl's post with her delicious avocado salad to put out a call for everyone's favorite no-cook recipe!

Mine is what I lovingly refer to as 'Happy Salad':
mixed spring greens
thinly sliced granny smith apples
slivered almonds
goat cheese
chickpeas or white beans
pickled beets (or if you want to cook a bit you can do roasted beets, or leave them out if you're not a fan)
chow-mein noodles
sweet balsamic vinagrette

Layer salad greens and toppings, crumble goat cheese over top and enjoy with crunchy chow mein noodles and vinagrette to-taste!
