During the fall season, I love making chicken tortilla soup! I can eat tons of it and don't feel too guilty because it's pretty healthy overall. Here's the recipe:
2 cans chicken broth (14 oz)
2 cans diced tomatoes (14 oz)
1 can of corn - DRAINED (15 oz)
1 tbsp ground cumin
2 lg. chicken breasts cooked & shredded (I just use a rotisserie from the store)
1 can Black Beans (15 oz)
1 can Kidney Beans
1 cup of Medium Salsa
1 clove chopped garlic
Mix all ingredients together. Do not drain tomatoes or beans. Heat until boiling. Simmer 10 minutes and serve. You can have it over rice, or with tortilla shredded on top with sour cream, cheese and salsa. I usually skip most of those items and instead just top with fresh chopped avocado. If you're going to be out for most of the day, I usually dump everything in the slow cooker on low for a few hours - it gets really chunky and thick, more like a stew. So yummy.

Last fall and winter I did Soupy Sunday too! It was a great way to make a healthy dinner and have lots of leftovers to take for lunches during the week.
I don't have the recipes handy at the moment but I did white bean and kale, vegetarian chili, butternut squash, cauliflower swiss chard and chicken, turkey sausage and chickpea and chicken and rice.
If any of those sound appealing I am happy to look up and share recipes!

I keep coming back to this creamy chicken & wild rice soup! AND you can make it in the crockpot which scores extra points with me.
ETA: Another favorite is this tomato soup. More time consuming but well worth it and doesn't require a ton of cream like most other tomato soup recipes. Enjoy it with a grilled cheese

We also make tortilla soup but have a different recipe! It was (is?) supposed to be a max n ermas copycat, but ours had more flavor and is thicker. I think MNE is kind of watery!
* 1 (10 1/2 ounce) can cream of mushroom soup
* 1 (10 1/2 ounce) can cream of chicken soup
* 1 (10 1/2 ounce) can cream of celery soup
* 1 (10 1/2 ounce) can cheddar cheese soup
* 1 (15 ounce) can chicken broth
* 1/2 (15 ounce) can diced tomatoes
* 1/2 cup salsa (chunky)
* 1/2 (4 1/2 ounce) can diced green chilies
* 1/2 onion, chopped
* 2 garlic cloves, minced
* 1/2 teaspoon red chili powder
* shredded chicken. (I make mine in a crockpot then add one handful size of chicken to my soup)
We combine all ingredients to a stock pot then cook on medium low for about an hour. You'll want to stir occasionally so the botom doesn't burn.
I buy all fat free soup cans & usually make my own chicken broth too. This recipe is actually halved, but it makes a HUGE pot. I always freeze the left overs in smaller containers for single portions.

Here's an old favorite of mine (I guess it's a classic weight watchers recipe)...it is sooooo yummy!
Taco Soup
Makes (12) 1 cup servings
Ingredients:
1 lb. ground turkey (or lean ground beef )
1 large onion, chopped
1 pkg. Hidden Valley ranch dressing mix (dry)
1 pkg. Taco Seasoning mix
1 can Pinto Beans
1 can Chile Hot Beans
1 can whole kernel corn
1 can stewed tomatoes (Mexican flavor like Rotel)
1 can stewed tomatoes (any flavor)
Brown meat and onions, drain. Mix Hidden Valley Ranch dressing mix and taco seasoning mix into meat. Then, without draining, add all of the other ingredients. Simmer 1 hour.
This is delicious served with tortilla chips, cheese, sour cream, avacados, etc

Love me some soup-obviously
I love to make potato leek soup. I have a fairly imprecise model, which I vary according to how I'm feeling. But here's the basic gist:
*Slice the white/light green parts of a bunch of leeks (2 large/3 small) and let them soak in water to get the dirt out.
*While the leeks soak, cube about 6 medium potatoes and boil them in salted water. Let them cook until they are fork tender, or maybe a bit beyond.
*While the potatoes cook, rinse and drain the leeks. Saute them in butter with salt, white pepper, thyme, a bay leaf, and a sprinkle of nutmeg for about 10 minutes. Sometimes, I will add chives in here as well.
*When the potatoes are done, reserve 2 cups of cooking water, and drain. Keep warm until leeks are soft. Sometimes, I don't drain them, but will just let them sit in the water for a while.
*When the leeks are soft, add 2 cups of chicken broth to the pot and bring to a simmer. Adjust the seasoning to taste.
*Add the potatoes, and, if it needs more liquid, some of the potato liquid. Bring to a simmer, and adjust the seasoning.
*Remove the bay leaf. Using an immersion blender (or a regular blender in small batches), puree the soup. Adjust the seasoning, if need be. If it needs more liquid, sometimes I will add milk at this point, but not usually.
Serve topped with creme fraiche and cheddar cheese. ENJOY!

Funny story, my family is super picky about their lentil soup-something about our Croatian/German heritage...there is ONE lentil soup recipe that gets used, and I don't even know it. But I think I could be a rebel without a cause and try something else...as long as I don't tell my dad or grandma

I love chili but I don't follow a recipe... I just dump stuff in! Same with chicken noodle.

So DH and I are obsessed with Olive Garden's Zuppa Toscana soup....so we make it ourselves from this recipe! It's not the healthiest, but.....it's SO.FREAKING.GOOD.

@Ash: My husband works nights, so he gets home a lot of mornings and smells what I have in the crockpot. I got a text last time I made it - "Potato soup?" I replied yes. His reply: "Awww yeahhh. That potato soup is why I married you!" haha...I will never tell him how easy it is!

Care to share your cauliflower swiss chard and chicken recipe? i'm always on the hunt to get DH to like cauliflower, but failed with my one cauliflower soup attempt last year, haha. How did yours come out?

It was really tasty and hearty. I think I left out the caraway seeds but added more salt + pepper and possibly red chile flakes because I like spicy food.

@CakeLady: thanks so much! the carrot apple ginger was delicious! i didn't use any one recipe, but roasted the carrots and apples beforehand and then followed a basic recipe (saute onions, add ginger and broth and some spices, boil, simmer, cool, puree). came out great!

Chicken Tinola It's a simple soup with delicate flavors made of ginger and green papaya. I love the way my grandma makes it. Although it's easy to make, green papaya and chili leaves are a little hard to acquire here. You can always skip the chili leaves, but I think it really brings out the flavor.
Ingredients:
chicken (chopped whatever way you like)
chopped onion
minced garlic
fresh ginger cut into slithers
green papaya cut into bite sized pieces
fish sauce
chili leaves (leaves of any organic pepper)
1. Saute the onion in a little oil
2. Add the garlic when the onion is transparent. Taking care to stir so that the onion and garlic don't get any color.
3. Add the ginger pieces (can be roughly cut slithers or pieces). Stir.
4. Add the washed chicken pieces. Stir in the mixture until the outside is no longer pink.
5. Add water just enough to cover the chicken.
6. Add a little bit of fish sauce.
7. Cover and simmer until the chicken is cooked to your liking.
8. Add the green papaya wedges or bite sized pieces.
9. Cover again and simmer for another 5 or 10 minutes or until the papaya gets soft.
10. Taste. Add salt or more fish sauce or both.
11. Turn off the heat and add the chili leaves. Stir.
12. Cover and let sit for a few minutes.
Serve with rice.

I've been going a little soup crazy myself, lately. So easy to make, and cheap, too. I'm about to make this recipe for the second week in a row because my husband is crazy about it.

After making this last week, I'm putting it in regular rotation at our house! I made the batch just to have around for quick dinners and whatnot. My husband ate it all--I didn't get a single bowl! The quick taste(s) that I had while making it led me to believe it would be quite delicious.
I would double the recipe, because it looks like it would freeze well, and then you don't have to worry about only using half a bottle of beer.

@ginabean3: We're obsessed with the Zuppa Toscana too! I use this recipe, but I follow the suggestions that the first reviewer provides. It tastes better than the Olive Garden's version!
