For something like that I'd do rice and a green veggie. Broccoli steams really fast, or frozen peas or something!

We always have got brown rice in our rice cooker (it has a keep warm setting) and I buy large bags of organic mixed veggies (peas, corn, carrots, green beans, edamame) from Costco. I can usually just bang that out or do a salad with bread. If you keep rolls or baguettes in the freezer you can toast them up pretty quick. Otherwise, I will boil up some noodles and toss them in olive oil the night before and reheat them the next day.

We do a lot of steamed broccoli and sometimes i make a bag of that broccoli "rice"....Dh calls it "candy rice'. It's one of his favorite things.
