I've got chicken thawed and ready for cooking tonight, but I have NO clue what to make.
Our usual go to meal is ckn fried rice, ckn pasta, etc.

I just pour anything over it and bake. You can pour any salad dressing or bbq sauce over it. And it's always stuff you have in the house.

I made these buffalo chicken bites last night and they were so tasty. (I omitted the butter, FWIW)

Cut into strips. Dip into a mixture of flour, salt and pepper. Dip into an egg wash. Dip into panko crumbs. Bake at 375 until done and serve with dipping sauces.

Lately one of our favorites has been to pour a can of Fiesta Nacho Cheese Soup over a couple chicken breast and cook/shred. Then I serve it over brown rice. YUM. (One good sized breast feed both DH and I).

I love lemon chicken, so theres that. Easy way- lemon pepper powder
DH likes BBQ chicken. Put it in a pan, cover it with BBQ. Bake at 375 for 45 min
Or there is chicken & pastry (some people say dumplings)
Orrrrr there is boiled chicken. Super good with turkey gravy dumped on it. Boil the chicken in enough water to cover it, until it breaks apart with a fork. Salt & pepper while cooking. When your done put turkey gravy on it and eat it over white rice! Mmmmh. That's what we're having tonight.

I marinate it, then just throw it in the oven. Easy peasy!
Slightly more work: bread it, pan fry it, then finish it in the oven. So quick, but does taste a lot better!

I like ranch dressing as a marinade, but I usuaully steam the chicken a little bit first or cook in a littl ebit of water, then I pour ranch dressing over it and bake it

So good!! I serve it with a veggie and either rice or stuffing on the side. A perfect fall meal.

my go-to chix recipe is to slice the chicken breasts thin - and I brown them on each side with just a little salt & pepper in some olive oil - remove the chicken, then in the pan I add either a little butter or some more olive oil and cook down a sliced onion, let that cook - throw in a splash of white wine, then a spoonful of dijon mustard and some half & half or cream to make a little sauce - throw the chicken back in the sauce (sometimes to make more sauce I add some chicken broth, and will add some corn starch to thicken more if needed) -- then serve over rice.... it's so yummy.

If you like Filipino food and you have an hour to let the chicken marinate, I recommend making Chicken Adobo. So easy and so yummy.

I love this thread - easy chicken recipes are the best!
I usually make stir fry with whatever veggies I have in the fridge. If I have about an hour, I'll combine soy sauce, balsamic vinegar, and garlic with chicken thighs and let it cook until the sauce gets thick and sticky.

@mrsjyw what did you end up making?
i like to roast chicken pieces, rubbed with olive oil, garlic and salt/pepper, throw in oven for an hour (turning over 1/2 way).
if i'm more pressed for time, i'll cube the chicken, saute it in garlic and a little soy sauce, then throw in some alfredo sauce and pour over linguine.
