I'm prepped to make a black bean soup this weekend because my New Years resolution is to save money and a vegetarian soup for dinner fits the bill and I love making a big batch to freeze for easy dinners later!

Just just made a batch of curried cauliflower and coconut soup, very yummy and filling as it's quite thick. Thinking I might make a leek and potato soup to bring to work next week. Soup is such a great winter meal especially with fresh crusty rolls

I think white Bean and kale soup! I have some beans to present. I think I'm going to soak them tonight and make it Saturday or Sunday!
I also still have oxtail in the freezer so will be making oxtail soup soon.

@autumnlove: so easy! Around here I have to go to a butcher for oxtail. But I'm going to stick up when I'm in NYC bc it's expensive here .
I just simmer on low with carrots for 2-3 hours. Then season to taste and add turnips at the end of about 20 minutes.
I just found a Korean oxtail soup recipe so I'm going to try that next!

I made this one last night. http://www.skinnytaste.com/2011/02/turkey-chili-taco-soup.html I just use half the amount of ground turkey b/c we aren't huge meat eaters. DH loves it with tortilla chips on top.
I'm not sure what to make next. Maybe chicken noodle or broccoli cheese? Soup is my favorite!

@Silva: I found a recipe on this blog, http://foodiereflections.com/?p=2654, I don't follow it faithfully for example I don't add ginger but I do add chilli powder as I like some extra spicyness in it. It's very yummy

@autumnlove: Yepp it's that one! I used original, unflavored almond milk instead of coconut milk and I couldn't taste an almond-y flavor at all. It just made it creamier. I think coconut milk would be the same. When I've cooked or baked with it before it hasn't been overwhelming I highly recommend it! I'm a fan of anything buffalo!

Probably Korean stew like kimchi jigae or dwenjang jigae. I used to make soups a lot more often when LO was into them but she is currently on soup strike
