I just eat it plain or throw ratatouille or spaghetti sauce on it. As for cooking it, I alwAys pre soak it in got water to soften it first.

There are a lot of good paleo recipes that are dairy free using spaghetti squash. I've recently made these two and they were both delicious!

Bake, scrape into spaghetti strands. Cut spicy Italian sausage into medallions, sear, saute with mushrooms, onions, and garlic. Add jarred marinara sauce to sausage mixture and simmer for a few minutes. Top spaghetti squash generously. Parmesan on too for those who want dairy.
Or top spaghetti squash strands with a dollop of marinara and a soft poached or fried egg. Sounds weird, tastes good.
ETA you can also put some marinara in a ramekin, crack an egg in it, and bake your topping while you bake your squash

@MrsKRB: yes to the pizza! Love it!
I like to microwave it than sautéed with butter beans, garlic and a can of crushed tomatoes.

I love this one spaghetti squash bake with lots of cheese. For non-dairy I would probably just do my regular spaghetti sauce recipe!

I cook it, chill it, and then make peanut noodles out of it! Peanut butter, dash of rice vinegar, hoisin sauce and spicy garlic pepper sauce mixed up and thrown in with "noodles" and slivered carrots, cucumbers and cilantro

I'll be making chicken caccitore later this week and putting it on top of spaghetti squash instead of pasta.

I like it with larb moo (Thai minced pork) over it. Essentially I just use it as a rice replacement, and think it's really good with any somewhat heavy, flavorful topping (think curry, chili, etc). It's sort of like tofu in that it takes on the flavor of whatever you serve it with.
