Ohh I LOVE tex mex food! What a fun party theme - here are some ideas:
jalapeno poppers
chunks of watermelon with lime, salt, and mint, (if it's still in season)
firecracker shrimp
smaller rounds of corn on the cobb with salt, cilantro, queso freso, chili powder
southwest egg rolls -
