Mashed potatoes are super easy! We made Pioneer Woman's recipe the other day and she says they work well if made beforehand. Or you could dibs the rolls and pick up a couple of packages at the store.

Two easy recipes for you!
Brandied Cranberries
4 cups fresh cranberries
2 cups sugar
1/3 cup brandy
Preheat the oven to 300 degrees.
Mix the cranberries with the sugar and bake covered in 9 x 13 inch baking dish for one hour
When cranberries slit and sugar is melted, carefully stir in the brandy.
Bake a few minutes more and serve.
Corn Souffle
1 can whole corn, do not drain
1 can creamed corn
8 oz sour cream
1 package muffin mix
1 stick of butter, melted
Combine all ingredients until well blended.
Put into a well greased large casserole dish.
Baked, uncovered, in 350 degree oven for 45 minutes- 1 hour.

@Adira: Would that corn souffle hold up well on a 2 hour drive or does it need to be pretty fresh out of the oven? Sounds delicious but our gathering is out of town!

@tororojo: When I had it this weekend, the person that brought it made it in advance, and then just popped it in the oven after the turkey came out for 10 minutes to heat it back up, so I think you could just do that. It was DELICIOUS.
ETA: Including travel time, plus sitting out before dinner, it was probably cooling for at LEAST two hours, but it wasn't cold, so it only needed 10 minutes to reheat. If yours is left out longer or you end up making it the night before, you probably need to put it in the oven for a little longer to reheat.

@Adira: Hmm well that might work for us! I could just make it that morning and keep it in something insulated. OR just stick with my cans of cranberry sauce...maybe corn souffle next year!

@tororojo: So my friend made it in the morning and then just brought it over in the baking dish (probably had a cover or tin foil on top, I'm not sure). Then it sat out for two hours or so and she just popped it into the oven after the turkey came out to reheat it. But if you're nervous about making something new, stick with the canned cranberry sauce!
