I love butternut squash! You can do it like mashed potatoes (or even cut it in with mashed potatoes). Or just straight oven roast it with some carrots, turnips, potatoes, or other root veggies.

My grandma would always make a salad with roared butternut squash pieces. I don't have the recipe, but I know it also had craisins and Parmesan in it.
